Giving solari to guilds, completing quests, battling wardens at taverns, and selling clothes, and other gear. Sometimes you have to grind a bit for cash, but in the process, you level up your solari and stuff. Thankfully, grinding is pretty fun. To evolve, you need essences. I would really recommend not going into the game blindly, otherwise it will be VERY difficult learning affinity and managing money.

Yea, you can capture solari in dungeons and in each area, there is usually a place to catch other solari as well. Some are more rare as well. However, you can not catch solari in towns or cities. Towns and cities are where the shops, taverns, and guilds are.
